Chocolate Roll Recipe

So, this dessert is good. Really good. As in, your sister-in-law’s mother makes it for your niece’s birthday about 5 or 6 (?) years ago, and you remember your first bite from that birthday party. Yup.

So when Christmas came this past year and Kelly asked what we should do for dessert, I think I blurted out this request before she finished her sentence. And when Christmas dinner arrived, I went up for seconds of Bonnie’s cake afterwards. Seconds. Of dessert. Embarrassing. (I like chocolate.)

It’s a fancy-looking little treat, but really isn’t that hard at all. I’m sharing it here because you really have to try it. Please? It will make you happy.

The original recipe calls for just plain (or raspberry flavored) whipped cream in the middle, but I added semi-sweet chocolate shavings to one of them, and made peppermint-flavored cream for the other, mixed in with chopped Andes candies. It was fun to change things up and quite yummy- but the original? Just as good.

Add some homemade chocolate sauce and maybe some vanilla ice cream and then eat it.

I have a feeling you’ll remember it long after that last bite.

(You may want to stabilize the whipped cream.)

Enjoy!

Kate - It IS delicious! Actually, can you bring this on Sunday instead of the sour cream and salsa?!? Sometimes it doesn’t pay to tell all your secrets!

Betsy - Oh, boy. Me and my big mouth… :) Sure, Katie! I would be happy to. I will try to refrain from taking seconds this time.
